cheesy noodle dish + blog reading tips

Hi!

This morning Jon and I hit the gym a little late, so I did a really quick interval run.  Sometimes it’s hard for me to get the motivation to kill it on the treadmill, but when I do it’s nice because I get done so much faster and I feel so good!  Unfortunately I didn’t have time for weights or ab work, but later I did spend some time running through my PiYo class for this week.

I also spent some time catching up on some of my favorite blogs over breakfast!

1/3 cup oats, handful of frozen blackberries, 1 tbsp chia seeds cooked in 3/4 cup water for 2 minutes.  Add a couple spoonfuls of soy yogurt and another sprinkle of chias (just for fun:) = best oatmeal ever. creamy. thick. delish.

I hate when I get behind and I feel like I don’t know what’s going on with everyone.  This morning was like catching up with friends…I love all my blog friends:)

One thing I’ve been having a hard time with lately, though, is time.  No matter how bad I want to catch up and comment on everybody’s blogs, I just don’t have enough time.  I can sit for an hour at some point in the day, reading and commenting, and still feel like I’ve only gotten through about half, which for me is about 15 or so. I just feel like I don’t have much more time than that to give to it, especially by the time I post on my own.

I feel like I see so many bloggers who comment on tons of blogs, and I just don’t see how they have time to do it.  Is there a secret that I don’t know about? I use google reader, but by the time I click out of it to comment, I’m not sure how much time it really saves.  What gives?

I’m hoping I’ll get some tips from some of you on how to read and comment on more blogs in less time!

Moving on.

For lunch today I made one of my favorite meals, but in about 1/4 of the time it took me to make it last time!

Cheesy “noodles” and brussel sprouts

Instead of cooking the spaghetti squash in the oven, I poked holes in it with a fork and put it in the microwave for about 12 minutes.  When I took it out, it was just the right amount of softness and I sliced it open with ease. In less than 2 minutes, I had cleaned out the seeds and then scraped out the “spaghetti” strands into a bowl.

While preparing the squash, I placed a bowl of halved brussel sprouts in the microwave with just a little bit of water for about 1 minute and 30 seconds.

Next, I mixed together 1 tbsp nutritional yeast, 2 tbsp hummus and about 1.5 tbsp water.  I whisked it until it had a smooth consistency.  Last, I combined about a cup of spaghetti squash and 1/2 cup of brussel spouts before pouring the sauce over top and mixing it all up.

I added a dash of black pepper and ground red pepper for some kick!

Delicious!  This is one of my favorite meals.  The credit does not go to me though – I think I originally saw this idea on Heather’s blog, and I think Gena actually came up with the sauce idea.  I know some of you may think it sounds like a crazy idea for a recipe…when I took this to work for lunch last year, my coworkers thought I had lost my mind.  Try it before you knock it though.  It honestly tastes like a big bowl of creamy, cheesy pasta!  Added bonus: it took me less than 15 minutes to make, and it heats up well too if you’re looking for lunch to take to work.

I know some people have a problem with using microwaves.  Honestly, I haven’t done enough research to voice an opinion, but I try to choose my battles.  And right now, that’s one I’m going to choose not to worry about.  If I had more time, I would just cook the squash in the oven, but on days like today I’d rather have microwaved spaghetti squash than none at all!

I’m off to meet a new tutoring student.  This is my first student who is not an adult – he’s a fourth grader!  I’m not used to this, so I’m crossing my fingers it’ll go well.  Hope you all are having a great day!

a savory morning

As I mentioned a few days ago, I have been craving savory breakfasts!  I used to live on oatmeal, yogurt or cereal for my early morning meal, but lately the sweets just aren’t doin’ it for me.

On my way home from piyo this morning (and admittedly a bit during) I started brainstorming breakfast.  I knew I wanted something savory, but I wasn’t really feeling eggs.  I contemplated hummus and toast…and then suddenly it hit me.

Savory oats.

I think I first got the idea for savory oats from Angela.  But honestly, I really didn’t think I could go there.  “There “meaning…to a world where we mix things like black beans and veggies with oats.  So, if you feel repulsed by this idea (ahem, Jon), don’t worry.  One day you’ll find yourself pondering what to eat for breakfast, and boom, it’ll hit you too.  Maybe:)

I immediately went to work.  First, I sauteed some swiss chard and corn in a skillet with garlic powder, sea salt and black pepper.

Next I mixed up some humnut sauce by combining a couple tablespoons of hummus with about a tablespoon of nutritional yeast and some water for thinning.

Meanwhile, I cooked 1/3 cup of oats in 3/4 cup of water for a minute and thirty seconds in the micro.  Watch ’em closely so they don’t overflow!

Lastly, I mixed the humnut sauce in with the oats, which created a cheesy, creamy consistency.  It was at this point that I started feeling pretty dang good about this recipe:)  mmmmm.

Once the chard and corn were finished, I laid them on top of the cheesy oats….and sprinkled on some chia seeds!

it was fantastic!  But still missing something.

While savory oats aren’t my favorite breakfast ever, I definitely will be making them again and trying new variations! If you’re having trouble with the whole idea, just think of the oats as a grain rather than a breakfast food.  You wouldn’t think twice about adding humnut sauce and greens to bulgur or quinoa, would you?

to nap or not to nap

Is your weekend flying by as quickly as mine?  It seems like it just started and now it’s already mid day on Sunday.

I’m hoping to fit in a short nap today, but I have so much I need to do I’m not sure it’ll happen.  If it’s ever going to happen though, Sunday is the day!  Sometimes it’s hard for me to nap during the day because I feel like time is just passing me by, and I could be using it to do something productive and/or fun!

Unfortunately, our alarm did NOT go off this morning *lame*…so we didn’t make it to Sunday School, but we did manage to get to our 2nd service on time.  We are currently studying 2nd Timothy, which I’m really enjoying because I think there are a lot of practical applications to take away for my daily life.  I love our pastor because he teaches the Bible straight up – verse by verse and passage by passage.  If you’re interested in checking out some really great teaching of the Bible, you can check out the website here.  You can download podcasts of the message each week or just past messages.

After church we headed home for some lunch !  I had quickly gulped down a green monster on the way to church, so my stomach was really talkin’ to me.  Lately, I’ve been just throwing together veggies a lot.  I always vary which veggies I use or the sauce or grain…or something, so it doesn’t get boring.  I love these kind of meals!

Today I stir fried some frozen cauliflower, green beans, spinach and edamame in a skillet.  I then added it to some leftover couscous from the other night and topped it all off with leftover “cheeze” sauce.  It was every bit as delicious left over as it was fresh!

Jonathan also shoved these down my throat a little while ago. uhg

I’m off to do some laundry and work on some projects.  I may also try to squeeze in some yoga a little later.  Or maybe…just maybe I’ll go join this girl

Gooood morning!  I was up and at ’em fairly early this morning – I’m meeting my mom in the city to hang out for the day, and I have to leave in t-minus 20 minutes.  eek!

Jon and I got in a good, strong 2.5 mile walk this morning.  We set out with intentions to run, but were such chatty Cathys the whole time that we ended up walking.  I dare say that going on walks with my husband is one of my favorite things in life.  I think I’ll try to slip in some online yoga tonight…I’ll letcha know which video I end up using, but I’m thinking maybe this, which was suggested to me by Maggie via Heather.  Thank goodness for blog friends, right?!

Last night I went to my power yoga class, and by the time I got back home it was after 7, and I was famished.  I decided to whip up this little recipe for Vegetable Couscous + Cheeze Sauce that I had seen on Angela’s site a couple of days ago.

I followed Angela’s recipe, but I did make a few adjustments.  First off, I halved the recipe because I was running low on nutritional yeast; I still had leftovers.  Also, I had to keep adding water as I stirred the cheeze sauce because it kept getting too thick.  In the end, I still would have liked it a little thinner and will likely add more water next time I make it.  Thirdly, I used about half the hummus and half the Earth Balance.

For veggies, I used sauteed broccoli sprouts, chopped carrots, chopped onions and chopped bell pepper.  Lastly I sprinkled ground red pepper over the top before I inhaled ate it.

All in all it was just as amazing as Angela raved.  I will definitely make this again, and I’m super stoked to have leftovers of the sauce awaiting me in the fridge.  muahaha.

I also treated myself to a side of steamed broccoli:)

Okaaayyy, now that I am officially 5 minutes late already, I gotta jet.  Sorry mom!

this girl knows what she wants

So, I’m not the only one who knows exactly what I want in my food.

For awhile now we’ve been having trouble with Olive not being able to um….let’s just say “hold down her food.”  It finally dawned on us yesterday that she might just be trying to tell us something.  Maybe losing your lunch at least once a week for no apparent reason isn’t totally normal.

After a short visit to the vet, we decided to change her food.  You can’t just change it overnight, though.  You see, if we switch her cold turkey lamb, we’ll risk having problems at the other end.  The trick is to sift in the new food just a little at a time and after about a weeks time be completely done with the old food.  Well, that only works if the ahem person involved agrees to continue eating the old food.  As opposed to only picking out the new food kernels of course.

Exhibit A.  This is what we found after having incorporated the new food in with the old.  If you look closely you can see that there are bits of food under her bowls.  She also had trailed it all across the kitchen floor.  So, we decided to do a little test to make sure it wasn’t a fluke.

Exhibit B.  Olive is given an Olive sized bowl each of California Natural (the old food) and Prairie (the new food).

Exhibit C.  When given the go-ahead, Olive immediately goes for Prairie.

Exhibit D (not pictured).  Trickster Dad stops Olive mid-gulp and quickly switches up the bowls to see if she chooses the same one again.  Of course she does.

Lastly, dad gives Olive the California Natural bowl and scowls as she turns her nose up at it.  He then proceeds to give her the Prairie bowl, which she immediately devours.

Folks, we have a verdict.  Now we’re left scratching our heads and wondering “has she been throwing up as an act of rebellion because she doesn’t like her food? or is she allergic?”  We may never know.

Onward and upward.  Today Jon and I proudly made it out of bed in time to get in a workout.  We had planned to break our sweat at the gym because it is so dang hot outside, but we were pleasantly surprised when we stepped outside and it felt only like a cool 80 degrees.  Without hesitation we abandoned our gym passes and headed to the street.  After putting in a quick 20 minute run, we came back to get O for a walk.

Shortly after our run, I was reunited with this guy

2 big handfuls spinach
1 cup soy milk
1 tbsp chia seeds
1 scoop Amazing Grass
1 tbsp almond butter
ice

Because of vacation and a lack of groceries since, I have not had a green monster in a couple of weeks!  It was a grand reunion.  Tomorrow I shall be reunited with overnight oats methinks.

I spent most of the morning at the coffee shop working on some stuff and sipping on a nice iced soy latte.

Now I know how this looks.  Let me explain.  When Jon and I decided to commit to our “no eating out for a week and that includes coffee” challenge, we agreed that we could still get coffee drinks from The Daily Grind.  Jon worked there for five years during college and we’re still good friends with the owner, so we have a prepaid card and we are only charged a dollar per drink.  I know, I know.  It still seems like we’re cheating, but technically no money changed hands, so I vote that we’re in the clear.

On a more honest and admirable note, I did pack my lunch so I wouldn’t be tempted to grab something.

Thank you Mister whole wheat tortilla broccoli slaw sprouts hummus and tempeh wrap.  You saved me from making a decision I would later regret.  Just a warning for tomorrow, though.  A good friend whom I haven’t seen in some time asked me to meet for lunch tomorrow, and I agreed.  Hey, life happens.  And the point of the challenge is still being driven home.

And dinner…

Carrots, onions, bell pepper, squash and zucchini sauteed in Evoo and doused with Bragg’s Liquid Aminos and Nutritional Yeast.  Served over a bed of Soba noodles.  A go-to favorite.

Followed by banana soft serve with a bit of Maranatha Chocolate Almond Butter mixed in.

The rest of the day consisted of a long overdue phone chat with my college roommate, starting to clean out our office and chilling with my sweet husband.

Exciting things going on here at the CSM house!  But before I get to that, let’s see some eats, shall we?

The last two days have actually been almost identical up until lunch.  If it’s not broken, don’t fix it, right?!

Green monsters for breakfast, of course.  For the last two days, I have actually managed to get up and get a workout in before work – shocking, I know.  I’m not going to lie, it hasn’t been pleasant or easy getting up at 4:45 am, but it has been so worth it.  To make it quick, I’ve been doing Jillian Michael’s 30 day shred.  I started off with level two, and it totally kicked my butt!  If you have never tried her workouts, you should definitely give them a go – they’re the only workout I’ve ever found that really pushes me with minimal equipment (just hand weights) and minimal time.  Sometimes I really want to punch her in the face, though.  If you’ve done it, you know what I’m sayin’.

Jon and I have also added in a 3 mile run the past two days after work as well.  I miss having really great workouts so much.  Ever since starting my new job last August and my hour commute, my workouts have really suffered.  But with the end of school fast approaching, I’m starting to get antsy to get back into it, and I figure I can push myself to do anything for four weeks.  So, double workouts it is!

Anyway, back to the point.  After a tough workout, I’ve been wanting nothing but green smoothies for breakfast…so refreshing and energizing!  You guys have all seen my smoothies a million times, though, so no pics today.

Lunch for the past two days has been salads!

I’ve made a tentative decision to start incorporating an occasional egg into my diet.  I’m honestly not sure how it’s going to go.  In my salad it was just fine, but when I tried to eat a plain boiled on yesterday for a snack, I got a little queasy.  Honestly, I’ve just been looking for new ways to incorporate protein into my diet.  I don’t believe I need a lot of protein, but I do try to have a protein source at most of my mini meals throughout the day.  Since switching to a mostly vegan diet, my complete protein sources for on-the-go meals and snacks (I pack most of my food everyday) have been based on nuts, nut butter and beans.  I just have been wishing for another option, and I feel like organic, free range eggs are a decent choice. Don’t worry, I’m not going to start eating many animal products anytime soon, but as long as the chickens are raised appropriately, I don’t have an ethical problem with eating eggs.

So, anyway, you may see the occasional egg on here in the future.  Just FYI:)  Even though it was a bit challenging to down the boiled egg on Tuesday, the healthy fat and protein sure held me over for a looong time. shrug.  But if they don’t become a bit more appetizing soon, I’ll def. be nixing them.

Onto dinner from last night.  As you will probably notice, I have been craving veggies.  So, I roasted some parsnips, brussels, sweet potatoes and tempeh.  With a side of natural ketchup for dipping:)

And tonight – same story.  Except I switched it up by having roasted kale chips, roasted squash and a slice of Ezekiel toast with Sabra spinach and artichoke hummus.  I sprinkled nutritional yeast, ground red pepper and garlic powder over the veggies.  Perfect.  It totally hit the spot.

I’m currently finishing off half a soy yogurt with a sprinkle of granola and frozen cherries for dessert!

Okay, now onto the exciting news.  I have officially ordered my materials through ACE to become a certified personal trainer!

I’m am stoked.  I’ve been considering it for months now, but fear has been holding me back.  Well, I’m not going to let fear rule my life anymore, so I’m going for it.  I felt so empowered last night as I clicked “submit order.”  I was watching a video of Kris Carr the other day.  She was being interviewed by Oprah, and she said “many people wait around for someone to give them permission to live.  Well, no one is going to give you that, you just have to go for it.”  I’ve been struggling with overcoming fear all my life, and especially lately I’ve been praying that God would give me the strength to overcome fear and not let it hold me back from doing what I’m passionate about.  I’ve decided I’m going to stop waiting around for that “permission” and just go after what I want.

So, I’ll definitely be spending a lot of time studying in the coming months, but I’m so excited about all that I’m going to learn and I’m looking forward to sharing some of it through CSM as well.

two for the price of one (but not really;)

Hey hey everyone!

I am loving the weather right now!  It’s that perfect temperature where there is a slight breeze, but the sun is warm enough that you can ditch the jacket and cruise with the windows down.  Ahhh.

I started off this morning with this beauty

Cheers!  These were my drinks for the morning.  I always take this water bottle (BPA free!) with me to work and fill it up throughout the day.  I’ve actually been slacking a bit on my water consumption, and I think it may be to blame for the headaches I’ve been getting.  Gotta hydrate!

Lunch was nice and simple – 2 brown rice cakes with 1.5 tbsp almond butter.  I also had an unpictured 1/2 banana on the side.

By 4 hours later I was famished!  I couldn’t tear into my yogurt with almonds and cranberries fast enough! I definitely let myself get too hungry.  Do you ever get to the point where you are shaky from being hungry?  Not a good place to be…take my word for it.  My snack was just enough to fuel me for a good weight training workout.  I did 6 different leg machines today plus some planks.  I love planks – they are seriously addicting.  I can just feel my core getting tighter and stronger.

After hanging with Jon for a little bit, I started not one, but two dinners; he was craving Mexican casserole, which might as well be called ground turkey casserole because that’s the main ingredient.  This is a meal my mom has made for years and it’s a favorite of our family.  I haven’t had it since before I became a vegetarian almost a year and a half ago.  Crazy!

I have to be honest and say that I really don’t enjoy cooking meat.  In fact, the other night in the grocery store, I found myself avoiding the meat department and sending Jon off on his own to get his goods.  I’ll do anything for my husband, so I always gracefully “handle” his meat, touching it as litle as possible of course.  I’m not trying to be dramatic…it’s just the longer I go without eating it, the less appealing it is.  Make sense?

Veggies!!  asparagus, squash, carrots, bell pepper, and the star of the show: mushrooms.  I also added some chick peas for protein and some garlic powder, ground red pepper and bragg’s for flavor and spice:)

In the end I topped if all off with a bit of nutritional yeast.  Perfect.

A little while later we ran over Jon dragged me to Orange Leaf to get some yogurt.  Excuse the poor quality photo – I’m still learning how to use my DSLR.

Dairy free pinapple yogurt, cocoa covered almonds, a few choco chips, kiwi and strawberries!

Heather is encouraging everyone to take part in GE’s campaign “Pledge for Better Health.”  If you haven’t stopped by there to pledge, you should!  I think it’s a great idea.  I pledged to increase my workouts to 6 times a week – not just to look better, but primarily for better health.  Too often I get so focused on outward appearance in relation to working out, and while there is nothing wrong with that, I want to get my focus back to health!  I’m going to be posting more of my workouts on the little bloggie to help keep myself accountable.

What is your primary motivation to workout?  Or is it a combination of things?  Do you find yourself more focused on how your body will look or how it will feel?
