Look who made her debut today!


This is little miss Sophie, Jon’s boss’ new baby girl.  She arrived late last night, so we stopped by to see her this morning.  We don’t mess around when it comes to babies.

You know what else is beautiful this morning?  The weather!!

I’ve been pining away for cool fall mornings.  Isn’t fall such a wonderful season?  This morning we headed out for a run, and my first step out the front door took my breath away!  I didn’t check the temperature, but it had to have been in the upper sixties.  My fingers actually got a bit achy cold during our run.

I soaked it up.

For our training run this morning, we ran 400 meters (.25 miles) four times (with a quick walk break in between) at the pace we would run a 5k.  We normally run a 5k at about a nine and a half minute mile, but it was hard to keep that slow of a pace when only running 400 meters at a time.  So, we ended up averaging about an 8:30 pace on each one.

We’re incorporating this type of run each week in an effort to improve our half marathon time.  We ran our first half marathon in 2 hours, 9 minutes and 20 seconds.  I was actually pretty proud of that, considering it was our first one.  And considering Jon and I aren’t the speediest runners around, it will be a challenge for us to improve upon that. But we love a good challenge:)

Before we hit up the hospital this morning, we ran by Panera because the husband has been itching for a breakfast bagel sandwich.  It’s a special treat for us to go grab breakfast or coffee together in the morning…and it totally makes my whole morning.

I went all out and got an iced half caf americano:)

Once I got home, I made up a quick Ezekiel english muffin with a smear of natural peanut butter and sliced banana.  It paired perfectly with my iced coffee.

A cool, breezy morning + breakfast out with the husband + sweet baby time = the best morning ever.  The rest of this day has a lot to live up to!

giveaway time! spreading the chia love

Jon and I woke up bright and early this morning and headed out for a three mile run.  It actually wasn’t too terribly humid and hot, and therefore was almost enjoyable.  I said almost😉

Soon after we got back, I was starving for breakfast and was wasting time on twitter while trying to decide what to have when Evan tweeted an idea for the Vega Shake and Go Smoothie mix from the HLS swag bag.  It sounded too good to pass up, so I went for it!

It may not look too appetizing, but don’t knock it ’till you try it.

First, I mashed a whole banana until it was fairly smooth. I then mixed in two heaping spoonfuls of Vega powder, 1/3 cup of raw oats and a splash of almond milk.  It turned out like a thick chocolate pudding!  My only complaint is that it was a tiny bit grainy from the powder.  Next time I think I’ll go a little easier on the powder, but otherwise it was awesome!  And full of protein!

The Vega mix is completely plant based and is corn, dairy, gluten, soy, wheat and yeast free. Per serving it has:

  • Two servings of veggies
  • 2500 mg Omega-3-6-9
  • 11 g complete protein
  • Only 100 calories
  • 1 billion probiotics cultures

Pretty cool, right? I have yet to find a protein powder that I like, but I’m a fan of this.

This morning I had my first meeting with a new student that I’m going to be tutoring!  She’s from Korea, and I’ll be tutoring her 3 days a week now.  I’m pretty excited about it – something inside me just lights up when I work with international students. 🙂

After my meeting I had lunch with my friend Grace at Panera.  I ordered a version of my favorite – Mediterranean Veggie sandwich, Garden Vegetable soup and a whole grain baguette.

And an Adora disc for dessert.  Not sure what I’m gonna do when these run out – I’ve gotten kind of attached:)

Okay, now onto the good stuff.  Sorry to leave you hangin’.

giveaway: Operation Beautiful book!

Hey peeps!

A couple of you guessed right earlier today – I got my nose pierced!  What’s funny is that I don’t think most people would consider me the type to have a piercing anywhere other than my ears.  But alas, I have an affinity for nose piercings.  That is, as long as they’re the right kind, ie. very teeny tiny.

The night before we left Thailand after our year there, a bunch of my friends were getting tattoos, so I decided to get my nose pierced that night.  On our journey back home to the U.S., we had a 3 day layover in Tokyo, and because I couldn’t find a smaller stud to replace the monstrous one they pierced it with, I took it out.  I hadn’t seen my family in a year, and I didn’t want to freak them out right when I stepped off the plane:) lol.

So, now that I am not teaching anymore, I decided it would be the perfect time to get it done again!  I love it!

Anyway, lets get to eats for the day and then I have an exciting surprise!

I actually had a really weird eating day today.  I just didn’t really have much of an appetite.  A couple hours after my coffee this morning, I snacked on the tiny bit of leftovers from last night’s Tempeh Stir Fried Rice.

This was just as delicious as it was the first time around!

And then a few hours later I finally broke down and just made a peanut butter and grilled banana sandwich.  It seems that when my appetite is gone and nothing sounds good – peanut butter always saves the day!

For dinner tonight we decided to go out.  Don’t even ask why…we just felt like it!  How’s that for livin’ in the moment;)  Anyway, I picked up some Panera, and it was deeelicious!

So today I ordered two Operation Beautiful books (by one of my favorite bloggers, Caitlin) off Amazon – one for myself and one for my little cousin.  Then I went to the website of our local bookstore, which by the way I’ve been to twice since the book dropped, and found out that they had just gotten it in!  Obviously I had to buy a 3rd copy:)

my husband bought us a mobile

Hey everyone!  TGIF, right?!  Per the usual Friday syndrome, I haven’t been super productive today; however, I was able to get caught up on some tasks built up from shopping with my mom all day yesterday, so it’s all good.

Speaking of yesterday (how’s that for a creative transition;), we had the best time.  It is rare that mom and I spend time just the two of us, but I’m always so thankful when we do.  Our day primarily consisted of talking, shopping, eating, eating…..and well, eating.  Wahoo!  My kind of day.  Unfortunately I didn’t get home until late and then spent the rest of the night cuddling with the husband, sooooo I didn’t do my online yoga.  Tomorrow.

I love that I now base my feelings about my food as much on how well it photographs as I do on how it tastes.  Priorities, right?!

Anyway, after shopping around for another few hours, we stopped for a snack

Not sure why, but this yogurt was the best I’ve tasted in years.  And it was completely sugar/artificial sweetener free (not dairy free, but who needs to know that?)!

And dinner.  My step-dad drove an hour to the city just to meet us to eat.  He likes to do nice things like that (line stolen from my FIL).  Although, I’m not quite sure whether the company or the food motivated him to be so kind.

Appetizer – corn tortilla with spicy carrots, onions and tons of salsa.  Just a side note, when eating Mexican, I try to eat fewer chips, instead replacing them with a corn tortilla or two.  Saves in the calories dept. as well as your health!

Wanna know one way to keep it vegan and still enjoy Tex Mex?  Order tacos with black beans instead of meat (you will most likely get a strange look for this, at least in Oklahoma) and hold the cheese.  Also, make sure and check with the server because re-fried beans (cooked in lard ewww) and mexican rice (cooked in meat stock) are often not vegetarian.  I find that there usually is a vegetarian bean option, even aside from black beans – all you have to do is ask!

It was a fun day indeed.  And can we say relaxing?  Thanks mom!

Not sure what Jonathan and I are going to do tonight.  Actually, I do know one thing we’ll be doing.  My ever so creative husband ordered a mobile for us.  No, we do not have a little bundle of joy on the way.  This mobile is more of a mobile for adults.  Hmmm…that still doesn’t sound quite right.  Either way, after we assemble it we’ll be hanging it in our office, and I’ll just have to show you pics tomorrow.  Simmer down, guys.  Don’t get yourselves overexcited now.

Yesterday ended up being quite the busy day!  I have several “projects” in the works right now that I am not quite ready to reveal, but they are taking up a lot of my time.  The cool thing is that I am loving working on them. It’s been awhile since I’ve had something going on that doesn’t really feel like work even though it is.

I’m wanting to get into doing more yoga this summer, and my gym had a power yoga class yesterday at 5:30 pm.  I still wanted to squeeze in some cardio so I did a quick 2 miles on the treadmill in the morning.  Over the course of the last month of school and then vacation, my running endurance levels have backslid a bit, so I’m trying to build my stamina back up.  Let’s be real, the hardest part of running is the phase where you are out of shape and just trying to build up endurance.  For me, running is not much fun during this phase, but it feels dang good when it’s over!  I think that’s why people sometimes have trouble getting into running – it is hard in the beginning.  But it does get easier and more fun the stronger you get. You just gotta hang in there!

I came back to a nice big bowl of overnight oats.  It’s been awhile since I’ve made them, and I have no idea why!

This bowl started off with 1/3 cup Greek yogurt, 1/3 cup soy milk, 1/3 cup oats and 1 tbsp chia seeds.  They marinated in the fridge over night, and I added chopped fresh cherries and sliced almonds in the morning.  The cherries added just the perfect sweetness.  Aren’t cherries the most wonderful fruit?

Grace is one of my favorite people, and we had such a sweet time of catching up.  Her husband’s name is Jonathan also, and we love getting together and having play dates for Olive and her little Bichon, Lucy.  She always shoots it to me straight and speaks truth into my life.  Friends like that are not on every corner, and I appreciate and love her immensely!

I ordered one of my two usuals from Panera – mediterranean veggie sandwich (hold the feta!) and a cup of vegetable soup.  Also a whole grain baguette for dipping.  I haven’t been getting my baguette fill since being back from vacation, so it really hit the spot;)

Several hours and one refreshing power yoga class later, I mad a quick and easy dinner.  We had some frozen pasta from a few weeks ago, so I heated it up.  I made two sauces – one for me and one for Jon.  Actually, I sort of cheated by using this awesome new Bove wine and mushroom organic pasta sauce I bought at the store last week (shhh!). I added tons of chopped bell pepper and onion to mine and bell pepper, onion and ground turkey to his.  I loved this sauce!  I don’t know how often I’d buy it considering the steep price, but maybe for special occassions.

We were up working late last night, so I ended up having a toasted Ezekiel muffin with Earth Balance a little later.

I’m off to clean out our office and get some work done on our budget.  Fun!  We are using a program called Mint. You basically set up your budget online.  Mint links to your bank account and automatically sifts every transaction into a category.  It sends you frequent updates through your phone, so you always know if you’ve gone over in a certain area. I hate those evil little messages.  Admittedly I’ve been guilty of just deleting them when they come through, but I’m getting better!

weekend in pics

Friday I took off work so that Jon and I could leave early for the Train concert.  I started my morning off with an ice cold green smoothie and Pilates at the gym.  Bliss.  I miss going to the gym in the morning.  Only four more weeks until I can go everyday!

Later I had some carrots and hummus to hold me over until lunch.

A little while later we packed up, hopped in the car and headed south.  The concert was at a casino about 3 hours away, so we had quite the drive!  It was nice, though, and we arrived just in time to check into our hotel, eat some pizza for dinner (sorry, no pics!) and make it to the concert with plenty of time to spare.

Guys, the concert was awesome!  If you don’t listen to Train, you should, and if you do listen to Train, you MUST hit up one of their concerts.  They put on a great show and played all my favorite songs.  Jon and I sang and danced the night away:)

The concert was over by about 10:30.  We just headed back to our hotel and spent the evening just hanging out.  It was the best night.

Saturday morning we slept in a bit, then hit the road.  We picked up some Starbucks for breakfast – I had the perfect oatmeal made with soymilk.  I added about half the amount of nuts and dried fruit that they gave me.  This was my first time to try Starbuck’s oatmeal, and it was fantastic!  It was the perfect serving size and was so delicious!  I would definitely get this again.

Next, we met up with my MIL and FIL in the city.  My FIL was going to play some golf, so we planned to hang out with my MIL for a couple hours.  Not before joining in on a little family golf and juggling.

I promise there is a ball there:)

Later we hit up PeiWei for lunch.  Yum!  My favorite.  I had a nice ice water with orange…

and the Korean Spicy dish which consisted of brown rice, tofu, mushrooms, carrots, long beans, broccoli, sugar snap peas, onions and sesame seeds.  I cannot get enough of this dish!  I ate almost all the vegetables and about half the tofu and rice.

After lunch and some quick shopping, we stopped at my mom’s house to pick up Olive and headed back home.  It was such a great weekend…I totally wish I could go back and re-live it all!

I started off this morning with a bowl of cereal.  I found a new Nature’s Path cereal that has corn flakes, amaranth flakes and quinoa .  It’s awesome!  We found it at Big Lots ( a bargain store) of all places.  So random!  I’ll be doing a real review over it later.

After church, we had lunch at Panera (I had my usual – black bean soup and mediterranean veggie sandwich), then spent the rest of the day taking a nap, watering the flowerbeds, doing laundry, washing the car, cleaning out the fridge and buying groceries!  Such a productive and fun afternoon.

And I ended the afternoon with another energizing green smoothie.  This one had a TON of spinach, Amazing Grass, 1/2 banana, almond milk, a bit of soy yogurt, ice and a sprinkle of granola on top!

Well, that’s it for tonight!  I’ve got to do some work for school still, and I need to be off to bed in about a half hour.  eek!

Happy weekend everyone!  How has your Saturday gone?  I love Satudays, and this one has not disappointed.

Jon and I slept in this morning, and then got up and headed out to our favorite running spot.  We have a small “lake” out north of town that has a 3.1 mile asphalt path all the way around it.  We actually did most of our marathon training out there last year.  Anytime we mention to someone that we once ran around it over 6 times they think we’re crazy.  And we probably are.

Anyways, we only made it around once today.  The wind was blowing about 30 miles per hour, and coming off the lake it was chilly!  But I have to say it felt great.  I have been having a hard time getting motivated for running lately, and I think I needed a good, solid, happy run to cure me!

We didn’t get going until about 11am, so I decided I need a little carb boost for energy.  I popped about 5 of these little guys

High in carbs and all the sugars are natural.  No added sugar for this girl!

A couple hours later we decided to hit up Panera for lunch.  Since it was about 1’clock and I’d had almost nothing to eat all day (so abnormal for me!), I upped the ante a bit and went for a pick two: half a Mediterranean Veggie sandwich (hold the feta please!) and a cup of black bean soup.  Against my initial better judgment I also had a whole grain baguette.  I guess my body needed the carbs!

After lunch I spent a little extra time at Panera getting some grading done while Jon went home to work on some design projects.  I have to say that grading is by far my least favorite part of teaching.  Getting through those essays was brutal today, and I still have half of them left!  Guess I know what I’ll be doing tomorrow afternoon:(

One afternoon of grading, a Starbucks soy latte, and some Lost watching later, we decided to cook up some dinner.  Tonight was another “eatin’ cheap” creation.  Very simple – “Basic Pasta Sauce.”

Ingredients:

1 28 oz. can diced tomatoes
2 15 oz. cans tomato sauce
3-5 button mushrooms, chopped
1 small onion, chopped
minced garlic
italian seasoning
oregano

Add chopped onion and garlic to skillet and cook until onion starts to get soft.  Next, add diced tomatoes, both cans of tomato sauce, chopped mushrooms, 1 tbsp italian seasoning and 1 tbsp oregano.  Mix together, then cover and let simmer for about 10 minutes.

While this is not a ground-breaking recipe, I love it because it is so fast, easy, cheap and it pleases the palate.  Leaving the meat out of the sauce reduces cost, and bulking it up with veggies is great for taste and satiety! If cooking only for myself, I would have added some chopped squash and zucchini, but Jon isn’t a fan so we stuck with mushrooms and onions.

Jon poured his sauce over whole wheat spaghetti, and I went with bulgur as my base.  Often times I’ll sub in bulgur for spaghetti because it has fewer calories and has 8 grams of fiber and 6 grams of protein per 1 cup serving.

I also had a side salad of mixed greens, chopped carrots, cucumber, onions and chia seeds with balsamic poured over the top along with garlic bread – aka ezekiel toast with Earth Balance vegan butter, garlic powder and nutritional yeast.

This meal really filled me up with all the volume foods and veggies!

We are off to rent a movie we’ve been wanting to see called Brothers.  Has anyone seen it?  What movies have you guys seen lately that you loved?  I’m always up for suggestions!
