Well, I am officially now 27 years old!

Thanks so much to all of you for your sweet birthday wishes – blogging is one of my top favorite things about my day, and it’s mostly because of you!

I decided to start my day off right this morning by going to PiYo class.  This particular class is really hard core and challenging, which is the main reason why I love it!  It always pushes me to limit and gives me great ideas of flows to incorporate into my own classes.

Before I left, I threw down 1/2 of this Larabar – just to have a little something in my stomach.  Nothing like shakin’ in my lulu’s when I’m in plank!

After I got home from yoga, I have to admit – aside from showering  I spent my whole morning on twitter/email.  I’m feeling a little bit overwhelmed by social media today!  There is just so much going on with Healthy Living Summit being this weekend.  It’s hard to disconnect.

I am so stoked to be going to HLS this weekend.  This is the second year for it, and I remember last year reading recaps from Jenna and wishing I could have gone.  It blows my mind that I’m actually going this year!

HLS is basically a two-day conference for anyone who loves and is passionate about healthy living.  And you don’t have to be a blogger to go!  So, if you think it looks like fun you should definitely make plans to go next year!  Then we could meet:)

It’s going to be a crazy ride starting on Thursday night for me.  Like a crazy person I booked a flight that leaves Wichita at about 7ish Friday morning.  Since I don’t want to pay for an extra night at a hotel, I’ll be leaving at about 1:30 am Friday morning to drive there!!!  Yes, that’s right – 1:30 IN THE MORNING.

Seeing as I have the sweetest husband in the entire world (IMHO at least:) he is insisting that he drive me the 2 hours to the airport and then turn around and drive all the way home. So, unless I can talk him out of it, I’ll be chauffeured! lol.

Once I arrive in Chicago Friday morning, I’ll be rushing to get to the hotel and leave for the Frito Lay tour by 9:20am (omg, it’s gonna be a long day).  The next event will be the Open Sky cocktail party Friday night, which you may remember from this post.  I’ll have to update you on the dress decision later.  It was a doozy!

Saturday will be filled with sessions all day, and then that night I’ll be going to a yoga class at a Chicago studio, followed by a fun dinner!  Sunday morning I have another early flight (what is the matter with me?!), and I’ll be back home getting slobbery kisses (from Olive of course;) by Sunday at about 10am.

I’ll be sharing the details and pictures with you as the weekend goes, and they will be recording the sessions, so you’ll all have a chance to listen sometime after the conference if you’re interested!  I just wanted to give you the low-down since I keep mentioned it all the time.

Now back to today.

For some reason I didn’t have much of an appetite after PiYo this morning…until about 10:45 am when it hit me like a ton of bricks!  So, I fixed the only snack appropriate for a mexican food addict/birthday girl

This held me over perfectly until the husband swooped in and saved me from twitter by taking me out to one of our favorite little cafes in town – Red Rock.

I ordered the same thing I always order there, and it was delicious!!

I can’t seem to find the photo of my sandwich, but you can see it peeking out in this pic!  It had all kinds of veggies on it + pesto sauce

So far it’s been an awesome birthday, and I just really feel so thankful:)  Thanks again for the sweet comments this morning – totally made my day.

a day in the life of olive

Good morning lovelies!

I did it, I did it, I did it!  I taught my very first PiYo class.  I have been so nervous about this all week.  It was a great exercise in not letting fear rule me, but instead facing it head on and conquering it!

My class was supposed to start at 9:15am, so I arrived early, dimmed the lights, got the music going and waited.  And waited.  9:15am came and went. 9:20 came and went.  Just as I was about to give up hope, an angel (aka Betty:) walked through the door!  I was so happy! It would have been a huge let down if no one had showed up.  A few minutes later another person showed…so my class ended up consisting of only two people.  Hey, I’ll take it.  Thank the Lord for Betty;)

Despite my nervousness I think everything went really well!

Before class this morning, I was so nervous that my appetite was virtually non existent.  I knew I needed some fuel though, so I managed to get a larabar down.

And then after PiYo, I had a hankering for some cereal.

Amidst the chaos of today, I’ve been working on my homework assignment for my photography class.  For the creative part of the assignment I decided to focus on my favorite little furbaby by doing “A Day in the Life of Olive” project.  So, if you’re interested in the least bit in what little miss does from the time her parents’ alarms go off to the time her furry head hits the pillow at night – or if you just get all giddy inside when you see cute pictures of pups, then here’s a little treat.

couscous salad and today's eats

Hey hey everyone!  How’s it going?  As promised yesterday, I have a newbie and an oldie recipe for you!

First up is Couscous Salad

Ingredients

  • 1.5 cup couscous, uncooked
  • 2 cups low sodium vegetable broth
  • 1.5- 15 oz. cans black beans, rinsed
  • 1.5 can low sodium corn
  • 1 red bell pepper, chopped
  • 1 bunch scallions, chopped
  • 1/2 medium onion, chopped
  • 1/2 – 1 chopped avocado
  • 6 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 3 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • handful of cilantro, chopped
  • 2 tsp chili powder

Directions

  • Bring vegetable broth to a boil.  Add couscous. Remove from heat and cover.
  • Chop bell pepper, onion and scallions and set aside
  • Whisk together oil, red wine vinegar, lime juice, and cumin in a large bowl
  • After couscous has sat for 5-10 minutes, fluff well with a fork and transfer sauce in bowl
  • Add black beans, corn, bell pepper, chopped onion, scallions, cilantro, chili powder, salt and pepper and mix well
  • Add chopped avocado just before serving

This salad is great chilled, but can also be served hot.  I made this recipe for my family Easter gathering, and I brought home a couple servings worth of leftovers.  So, if you’re making it for one, you may want to half this recipe.  I love having leftovers on hand, though.  I took a bowl of this for lunch today, and it was filling as a meal too!

You guys have got to try this – I absolutely loved it and so did my fam!

Next up is my version of Averie’s Vegan Peanut Butter Chocolate Chip Protein Bars

This was actually my second time to make these, but I altered a couple of things from the last batch, and I think they turned out even better!

Ingredients

one ripe banana, mashed
1.5 cup oats
1/2 cup dried cranberries
1/2 cup vegan chocolate chips
1/2 cup pure maple syrup
1/2 cup natural pb
1 scoop of Jay Robb Brown Rice Protein Powder (or protein powder of your choice)
3 tbsp sliced almonds
2 tbsp whole flaxseed
2 tbsp chia seeds
1.5 tsp cinnamon
1 tsp vanilla extract

Directions
Mash banana in a large bowl
Combine the rest of the ingredients a few at a time and mix well
Place saran wrap in 8×8 pan (Averie’s idea:)
Press mixture into pan with hands
Cut bars right away – I cut mine into 16 squares
Freeze bars

I think these bars are best served right out of the freezer, but you can eat them any way you like!  As you can tell these are quite calorie dense, but they are so sweet and delicious that one small square is satisfying!  After freezing mine, I took them out of the dish and wrapped them individually.  Instant portion control!  I was so happy because these were a total hit with my family.  Usually they aren’t too keen on my concoctions, but I think they really loved these.  Score!

My eats today were pretty basic.  For some reason I wasn’t that hungry today.  I sipped on my green smoothie throughout the morning, whereas I usually finish it on my drive to work.  I even took the last bit of it to lunch with me.  As mentioned earlier I also had leftover couscous salad for lunch.

I also packed all of this!

So, I actually didn’t end up eating the kiwi or the carrots because I just didn’t need it.  It’s sitting in my fridge at work, waiting to be eaten tomorrow!  I don’t think I’ll be able to resist it tomorrow – I love kiwi!

Dinner tonight was Whichwich.  We just didn’t feel like cooking – we both had a lot to do tonight and wanted to just chill out and skip kitchen duty. So, Whichwich it was!

Tomato and avocado on whole wheat with lettuce, pickles, pepperoncini, mushrooms, bell pepper and onion – my fave!

Well, it’s getting pretty late and I still want to go out for a walk with Jon and Olive.  Our walks are always the highlight of my day!  I think we may have some storms coming in though, so off I go!  See you guys tomorrow!

home sweet home

Hi lovely blogging friends!  Today has been quite a lazy day for me, but I did get to spend some fun time reading blogs that I don’t always get to read because of lack of time.  We had a big ice storm here today, and it’s supposed to last until tomorrow.  I’m off work tomorrow as well so I’m looking forward to a four day weekend!  Of course I’ll have to put in some hours working on planning, but that is SO much better than having to commute and be at school all day.  Yea!  There is something about being “snowed in” that I like – at least for a period of time.  Especially if it’s with my favorite person.  We aren’t absolutely sure that he’ll be off tomorrow, but we’re thinking he probably will.  Fingers crossed!

Anyway, so being home today was especially nice on the food front because I didn’t have to eat transportable things.  Yea!  Unfortunately Jon took the camera to his office today, so my pictures from early in the day were taken with my iPhone.

I was up, showered, made up and about to walk out the door this morning before we found out that school was closed.  And, Jon had already made my green monster.  Usually if I’m home for breakfast I like to eat something “chewable,” if you will.  Don’t get me wrong, I love my gm’s.  But, since I have them every weekeday, I just like to mix it up if I’m home.  Since he had already it, though, I went ahead and had it for breakfast as soon as we got back from the gym.  It was nice to go to the gym in the morning.  I’m really a morning workout person, but our gym opens at the same time that I have to leave for work, so I usually have to go in the afternoon.  It was a really refreshing way to start the day!

By a couple of hours after my monster, I was already ready for a snack!  I think my body isn’t used to burning so much fuel first thing in the morning, and it wanted food ALL day, which was fine by me:)  My snack was a brown rice cake with a smear of AB and half a sliced banana.   This is one of my absolute favorite snack…I love the crunchiness of the rice cake combined with the irresistible mix of nut butter and banana.  Oh yeah.  With a side of Mandarin Orange Spice tea made in the Keurig.

A few hours later Jon got home and we threw together some lunch.  I had this tasty pita filled with all kinds of goodness:)

After lunch,  I seriously laid down and took a two hour nap.  I usually have a hard time taking naps because I just can’t relax, but we just got a new comforter and between that and the sound of the rain and ice outside, I was lulled to sleep quite easily.  It felt so good to just rest.

As soon as I woke up, my body was telling me it was time to eat…again!  So, I had some O’soy vanilla yogurt with a sprinkle of Kashi U walnut and black currant cereal.  I love the combination of yogurt and cereal…you just can’t beat it. This Kashi U is awesome tasting, and the ingredients aren’t too bad either.  There are few cereals that I really feel good about eating, and this is definitely one of them.  It even comes packaged in a recycled box;)

And now for din din.  I decided to try something new that I’d seen other people do before – a portabello mushroom burger.  So, I threw a giant portabello mushroom cap in some evoo and grilled it with some garlic powder, red pepper and balsamic vinegar.  I also tossed in some brussels and steamed some green beans in the microwave for a side.

I also added:

  • hummus (round two!)
  • pickes
  • onion
  • tomato
  • spring mix

If you haven’t tried this before, you must!  The balsamic and seasonings soaked into the mushroom and made it so juicy and flavorful!  Interesting fact about me: until about a couple of months ago, you couldn’t pay me to touch any kind of mushroom.  Then, suddenly I just started craving them.  Random, I know.  I’ve been eating them on everything, though!

A couple of hours later, I topped off dinner with a small piece of Averie’s vegan peanut buttter chocolate chip protein bars that I made a few nights ago.  These bars are seriously to die for.  They are the best vegan dessert I’ve ever made by far!  I just have trouble stopping at just one;)

So, that’s a wrap on my day.  I think we may watch this week’s precursor for Lost season 6 that we DVR’d the other night.  We cannot wait until next Tuesday!  Any other Lost lovers out there?

a "re-epiphany"

First things first, people.  As I mentioned yesterday, I made Averie’s Vegan Peanut Butter Chocolate Chip Protein Bars.  They are TO DIE FOR.  So good!  They are gooey and soft, and for me the bitterness of the carob is the perfect compliment to the sweetness of the dried cranberries.  All of the flavors mix together in just the right way.  Her recipe is pretty flexible, so lemme tell you what I put in them.

– one ripe banana
– 1.5 cup oats
– 1/2 cup dried cranberries
– 1/2 cup carob chips
– 1/2 cup pure maple syrup
– 1/2 cup natural pb

– 1 scoop of the only protein powder (soy) I had on hand
– 3 tbsp sliced almonds
– 2 tbsp milled flaxseed – Walmart didn’t have whole flaxseeds.  I think whole would do much better.
– 2 tbsp chia seeds
– 1.5 tsp cinnamon
– 1 tsp vanilla extract

I mixed it up just like Averie suggested.  If you notice, I omitted the coconut, which may have made my bars more gooey – not that that’s a bad thing!  I certainly have not skipped a beat in slicing off a piece each night;)  Definitely try these out if you’re looking for a healthy, vegan sweet treat!

Today I had an epiphany.  Funny thing is, this isn’t the first time I’ve had this epiphany.  I’ve realized, though, that sometimes in my life I have to learn things over and over.  Bad habits tend to come back randomly, and I have to relearn my new, good habits.  Here’s the story:

Usually when I come home from work, I run in the house, change clothes as fast as possible and race to the gym.  I like to get my workout in and get back home before Jon’s been home from work for too long.  Today, as I was driving home I was realizing that my body…and mind, for that matter…were just not feeling a workout.  Now, for me there is a difference between just not wanting to get on the treadmill or weights and me really needing a rest day.  I could feel it in my bones muscles, and I knew that I needed to take a day off.  Plus, I was completely mentally drained.  This week has just been extra busy and strenuous, and I haven’t given myself a chance to recoup.  So, I was going back and forth in my mind between two things: burn calories and get a good cardio workout in OR give myself a mental and physical break.

I started feeling guilty at the thought of not going to the gym.  I was telling myself that I needed to go to the gym no matter what because I needed to burn those calories.  Then Jon called.  He was headed home early from work and would be home any second.  Talk about making a hard situation harder for me.  Now I wanted to stay home to be with him, really wanted to rest, but the guilt was warring inside my head.  I haven’t done this to myself in a long time.  I honestly thought I was past the point of feeling guilty over working out and focusing way more on calorie burning than mental, emotional and relational (when I’m feeling guilty it affects my entire attitude, even toward Jon) health.

So, to make an already long story a little shorter, Jon coaxed me into staying home and resting, but not without a lot of whining and “bad mood” from me.  Because of him, I went to lie down for a bit.  I started thinking about the whole situation with a little more clarity.

Our physical health is not more important than our mental or emotional health.  Sometimes I make the mistake of putting more emphasis on my physical health because it’s outwardly evident.  If I gain five pounds, other people will notice and my jeans won’t fit quite as well, however, if I completely exhaust myself, other people don’t have to know.  It’s a lot easier to ignore.  So, I decided I’m making a commitment to start focusing equally on each area of my life.  I’m always striving to find that balance, and while I did have a setback today, I also took several steps toward becoming more balanced.
