turbo kick = a bust

Hello!

Thank you all so much for your support and encouragement on yesterday’s post about my decision to leave my job.  That post was very difficult to write because putting it all down on “paper” made it seem more real…and more scary.  I honestly can’t say that I woke up this morning feeling no fear or doubt, but nothing worth attaining is every easy, right?  Your comments completely made my day and helped calm my racing mind.  I just keep re-analyzing the situation and the what ifs over and over in my head, and I know that is getting me nowhere good.  I’ve got to be able to let it go and get excited about moving forward!

You all really do mean so much to me, though, and I’m so thankful for you:)

This morning I tried to ward off Satan’s attempt to bring me down by spending some time with the Lord over a seriously good yogurt bowl

blueberry soy yogurt with 1/3 cup raw oats, 1/2 tbsp chia seeds and some dried cranberries

Later I headed to the gym – I’ve been wanting to try out the Turbo Kick class and today seemed like a great day to do it!  Maybe not.  I was the only one who showed up!  The instructor and I ended up striking up a conversation and talked through the entire class.  I was kind of bummed that I didn’t get to try it out, but I found out a lot of interesting things about certifications that might help me in the future, so I suppose it was worth it.

After we finished chatting I hopped on the treadmill and cranked out 3 miles.  I forgot to reset the treadmill after my walking warm-up, so I don’t have final stats unfort.  It was a pretty good run though, and my last mile was my strongest, so I consider that a win!

I followed the run with some of Polly’s yoga for runners. I’ve been doing this after every run this week, and I feel like it really is helping me to loosen up a lot, which helps with my runs.  My legs haven’t been feeling as tight, and I feel lighter on my feet.  If you haven’t checked out her site, you should stop by – she has a plethora of great yoga videos!  And she’s cute as a button:)

Lunch!

I whipped up a new, but very simple little dish for lunch.  I’ve been craving this new organic pasta sauce we bought last time we were at the store.

I tried it once before and loved it!  And check out the stellar ingredients.

I mixed 1/2 cup of sauce with 1/3 cup of black beans and a handful of frozen spinach.  Popped it in the micro for about a minute and a half and poured it over top 1/2 cup of cooked quinoa.  It was delicious!  The flavors combined perfectly.

On the side I also had a sliced pear sprinkled with cinnamon.

You should try this concoction!

This afternoon I’ve been working on some stuff for Outbox (our business), and I talked to my sister for a loooonnng time!  Love conversations that are so good they go on for hours:)

spring!

Hey guys!  How has your Thursday been?  Mine has been just fine, but quite tiring.  I haven’t been getting as much sleep as I need to lately, and it’s really starting to wear on me.  With a 5am wake up call each morning, it’s hard to do everything I need/want to do post 5 pm and still get a decent amount of sleep.  I’ve been locking in about 6ish hours, which could be worse, but it also could be a lot better.  I’ve got to do something about my schedule b/c it is just not working.  How many hours of sleep do you aim for?  Do you feel that a lack of sleep affects you in all areas throughout your day? I definitely do.

I tell you what, I had the best lunch today!  Last night, Jon had to go to Tulsa for a freelance meeting.  He is going to be creating the branding (logo etc.) for the Route 66 Marathon in Tulsa this year, and he had to meet with the director of the race (I’m so proud and excited!).  Anyway, he called me on his way home at about 9:30 and said that he was stopping in Whole Foods to get me some Amazing Grass and a few other odds and ends.  Do I have an amazing husband or what?!  He ended bringing home 2 Kombuchas, Amazing Grass, and 2 different salads from the bar for me to take for lunches.

This first one is called Couscous Primavera, and I’ll be taking it for lunch tomorrow.  Yay!

Ingredients include:  Israeli couscous, carrots, onion, bell pepper, scallion, zucchini, evoo, lemon juice, dill, parsley, lemon zest and salt/pepper.  I definitely plan to try and recreate this one on my own.  It was delish (I couldn’t help but try a bite when he got home last night)!

The second on is Orange Quinoa with Mint and Almond:  quinoa, bell pepper, green onions, almond slivers, mint, orange, lime juice, sherry vinegar, honey (not vegan, I know!), sea salt, and pepper.  I took this one for lunch today.  It was tasty as well, but overall I think I like the couscous better.

Sorry all I have for you is boring store bought meals tonight, but sometimes you just gotta go with it.  I love getting special dishes from WF…especially because it’s a rarity!

After I got home from work today, Jon and I took Olive on a walk.  I’ve been having a really difficult time getting the energy/motivation to work out after work.  I am a huge morning workout person, so I’ve been feeling very frustrated with my schedule.  When I’m already getting only 5-6 hours of sleep, it’s hard to bring myself to get up earlier to work out.  I just really don’t like working out in the afternoons, though!

Our walk was great, though.  I love spending time outside together and just enjoying the weather.  I didn’t work up much of a sweat, but it was better than sitting on the couch!  Here are some pretty pics of springtime in Oklahoma:)

Are you a morning or afternoon workout person?  If afternoon, how do you get the energy to do it after working all day?  Also, how do you balance getting your workout in with cooking dinner, eating, cleaning up, blogging, keeping up with household stuff, spending time with significant other etc?  Please share your tips and tricks!

Almond Sauce Stir Fry

Hi!  I had the best dinner tonight!  I was actually going to talk about my green monster from this morning first, but I’m so happy about how dinner turned out that I just can’t wait.

After work today, I headed straight to the gym to do some lifting.  When I got back, I was already starving, but Jon had to head back to work for about 30 minutes for a meeting, and I wanted to wait on him to eat.  So, I threw a great combo of cucumber, carrot, apple and lemon into the juicer – it turned out pretty good.  I’ve only used my juicer a handful of times since I got it at Christmas (review to come!), and I still haven’t figured out my favorite combination yet.  Any fun suggestions?

Anyway, so I sipped on my juice and started chopping up some veggies while I waited.  I seriously was craving a huge plate of vegetables….but, I’ve been really focusing on getting more protein into each meal, so I decided to try something new by incorporating protein and healthy fat into my “sauce.”  I tossed cauliflower, carrots, asparagus, onions and mushrooms in my big skillet and began sautéing them in just a bit of EVOO.  Using Thai peanut sauce as my inspiration, I put in a tablespoon of almond butter and a splash of tamari and mixed and heated it through.  I did have to add just a touch more EVOO as well to eliminate dryness.  When it was all done, and hubby was home of course, I laid the vegetable mixture on a bed of quinoa (more protein!) and tadaa!  It was time to eat!

Let me tell you, this meal was so good.  It had a bit of an Asian flavor with just the right amount of AB and tamari…and a sprinkle of seeds of course!  I could seriously have this meal every night…but I won’t.  Gotta keep things interesting!

Before I go, let me tell you really quickly the best thing that happened this morning.  I’ve been drinking green monster, thanks to Angela, for about a year now.  My sweet hubby gets up to make it for me before I leave at 6am.  Ever since school started back up, there has just been something…off…about the texture.  I couldn’t figure it out.  I had switched from soy to almond milk in an effort to limit my soy consumption a bit, so I thought that may be the problem, but we switched back and saw no improvement!  So, I suggested that this morning he should try adding a little more milk and leaving out the flaxseed…and it worked!  You have no idea what a happy girl I am to have my beloved monster back to normal…it’s my livelihood at 6am!  Yea!!
