Good morning!

I honestly cannot believe how quickly the weekend flew by…seems like it just started.

On Saturday things warmed up a bit around here, and some of the snow started to melt off.  By late in the day, many of the streets were almost clear…but there’s still tons of white everywhere else!  Apparently (I never watch the weather) there is more snow headed this way in the next few days, but we shall see!

I know I’m beginning to sound like a broken record, but Saturday and Sunday we spent a lot of time organizing and packing.  The story of our life these days.  I have to admit it feels sooo good to get it done, though.  We are still a long ways from being packed, but I think we did finally finish the office for the most part after being buried in boxes and files for the last few days.

Saturday night I got inspired to make a stir-fry.  When I asked the husband what he wanted for dinner, he said something I thought I would never hear him say: “How about something besides mexican?”

I thought I was dreaming.  Did he just say he didn’t want mexican food?!

So stir-fry it was!

I chopped up bell pepper, onion, broccoli, carrots and cabbage and stir-fried it in about one tablespoon of olive oil until it was tender.  Then I tossed in some frozen edamame (did you know edamame has the same amount of protein as roasted turkey?) for protein.

After it had cooked for a little bit, I mixed together about two tablespoons natural peanut butter, two tablespoons tamari, a couple teaspoons rice wine vinegar and some water to thin it out.  Honestly, I just kind of guessed at the proportions and tasted as I went.  I poured the sauce over the veggie mixture and continued to cook them for another 5-10 minutes.

In the meantime I cooked some buckwheat (soba) noodles, and when it was all done I poured a big spoonful of veggies over the noodles….and that was it!  Easiest stir-fry ever.

Stir-fry reminds me of Thailand so much.  During the last few months we lived there, I literally ate stir-fried veggies in some form every. single. night.  No exaggeration.  Always on top of brown rice.  Granted I wasn’t a vegetarian then, and I used fish and oyster sauce (Thai style) for flavoring, but it was still so good.  Really takes me back:)

Anyway, on Sunday the husband and I went to lunch with some dear friends of ours from our college days.  They are several years older than us and have three of the cutest little kids.  During our time in Campus Crusade for Christ at OSU, Dan discipled Jonathan, and Debbie discipled me.  They have always meant so much to us and have walked with us through some of the most important decisions in our life.  It was so nice today to catch up and spend time with them…we’re really going to miss them when we move.

Other than packing throughout the afternoon, I also made some Super Charge Me cookies for the husband.  While he ate cookies, I enjoyed a leftover vegan cinnamon roll.  This morning someone brought cinnamon rolls to Sunday School, and ever since then I’ve been craving one.  I can honestly say that these rolls are one of the best vegan baked goods I’ve made yet.  The day after I made them, I realized that unless I wanted to turn into a giant cinnamon roll, I needed to put them away for awhile.  So into the freezer they went.  A couple of times since then I’ve pulled one out and heated it in the microwave for about a minute and a half…and it’s always just as good as when it was fresh out of the oven.

You really must make these if you’re a cinnamon roll fan!

So that’s the weekend in nutshell – only two more weekends left until moving weekend!

Last thing – I have to give a shout-out to my better half.  Today is the husband’s first day at his new job, and I am so dang proud of him.  I’m so thankful for all the hard work he has put in over the last several years to get us where we are.  This is just one more step we get to take along the path of our life.  I’m going to miss him now that he’s leaving earlier, getting home later and not coming home for lunch (tear), but I know he’s going to love his new role…and he’s totally going to rock it! Go get ’em husband:)  I love you!

this girl knows what she wants

So, I’m not the only one who knows exactly what I want in my food.

For awhile now we’ve been having trouble with Olive not being able to um….let’s just say “hold down her food.”  It finally dawned on us yesterday that she might just be trying to tell us something.  Maybe losing your lunch at least once a week for no apparent reason isn’t totally normal.

After a short visit to the vet, we decided to change her food.  You can’t just change it overnight, though.  You see, if we switch her cold turkey lamb, we’ll risk having problems at the other end.  The trick is to sift in the new food just a little at a time and after about a weeks time be completely done with the old food.  Well, that only works if the ahem person involved agrees to continue eating the old food.  As opposed to only picking out the new food kernels of course.

Exhibit A.  This is what we found after having incorporated the new food in with the old.  If you look closely you can see that there are bits of food under her bowls.  She also had trailed it all across the kitchen floor.  So, we decided to do a little test to make sure it wasn’t a fluke.

Exhibit B.  Olive is given an Olive sized bowl each of California Natural (the old food) and Prairie (the new food).

Exhibit C.  When given the go-ahead, Olive immediately goes for Prairie.

Exhibit D (not pictured).  Trickster Dad stops Olive mid-gulp and quickly switches up the bowls to see if she chooses the same one again.  Of course she does.

Lastly, dad gives Olive the California Natural bowl and scowls as she turns her nose up at it.  He then proceeds to give her the Prairie bowl, which she immediately devours.

Folks, we have a verdict.  Now we’re left scratching our heads and wondering “has she been throwing up as an act of rebellion because she doesn’t like her food? or is she allergic?”  We may never know.

Onward and upward.  Today Jon and I proudly made it out of bed in time to get in a workout.  We had planned to break our sweat at the gym because it is so dang hot outside, but we were pleasantly surprised when we stepped outside and it felt only like a cool 80 degrees.  Without hesitation we abandoned our gym passes and headed to the street.  After putting in a quick 20 minute run, we came back to get O for a walk.

Shortly after our run, I was reunited with this guy

2 big handfuls spinach
1 cup soy milk
1 tbsp chia seeds
1 scoop Amazing Grass
1 tbsp almond butter
ice

Because of vacation and a lack of groceries since, I have not had a green monster in a couple of weeks!  It was a grand reunion.  Tomorrow I shall be reunited with overnight oats methinks.

I spent most of the morning at the coffee shop working on some stuff and sipping on a nice iced soy latte.

Now I know how this looks.  Let me explain.  When Jon and I decided to commit to our “no eating out for a week and that includes coffee” challenge, we agreed that we could still get coffee drinks from The Daily Grind.  Jon worked there for five years during college and we’re still good friends with the owner, so we have a prepaid card and we are only charged a dollar per drink.  I know, I know.  It still seems like we’re cheating, but technically no money changed hands, so I vote that we’re in the clear.

On a more honest and admirable note, I did pack my lunch so I wouldn’t be tempted to grab something.

Thank you Mister whole wheat tortilla broccoli slaw sprouts hummus and tempeh wrap.  You saved me from making a decision I would later regret.  Just a warning for tomorrow, though.  A good friend whom I haven’t seen in some time asked me to meet for lunch tomorrow, and I agreed.  Hey, life happens.  And the point of the challenge is still being driven home.

And dinner…

Carrots, onions, bell pepper, squash and zucchini sauteed in Evoo and doused with Bragg’s Liquid Aminos and Nutritional Yeast.  Served over a bed of Soba noodles.  A go-to favorite.

Followed by banana soft serve with a bit of Maranatha Chocolate Almond Butter mixed in.

The rest of the day consisted of a long overdue phone chat with my college roommate, starting to clean out our office and chilling with my sweet husband.

Happy Wednesday night!  I always enjoy Wednesday nights because it means the week is over halfway through, and we’re sprinting towards Friday!

Tonight I received my very first lesson from Jon about how to take care of the admin side of his business.  One of my goals for our future is for me to take care of the all the admin side, so he’ll be more freed up to design.  It may be surprising, but I’m really excited about it!  I love having my own “gigs,” but there is nothing I love more than being with him, so doing business together totally floats my boat!

I’ve really been trying to clear my head lately.  As I’ve mentioned before, I’ve got some decisions that I’m trying to work through, and it’s starting to really wear on me.  I often have a hard time “shutting down.”  The more I try to not think about something, the more I think about it!  I just need a break, I think, so I can step away and try to see things from a new perspective.  Any ideas on how to just relax and clear your mind of stress?

I had some seriously great eats today.  It all started off with the usual GM (almond milk+spinach+Amazing Grass+1/2 banana+chia seeds+ice).  Today was Pita Pit day at school, so I had my usual whole wheat pita with babaganoush, spinach, onion, bell pepper, mushroom, sprouts, pineapple, tomoto and hotsauce.  Unfortunately they were out of avocado, so no healthy fats for me.  Bah!  It was tasty nevertheless.

Confession:  I don’t take pictures of my food when I eat lunch at school.  For one, I never take my camera, but also I haven’t told my coworkers about CSM.  I’ve considered telling them, but I just kind of want to keep my private life a little bit separate.  Do your coworkers read your blog?  Do you feel weird about them reading about the personal side of your life?

Look familiar?  Yes, that’s right.  It’s the same exact meal from last night.  Creative?  No.  Delicious? Most definitely!  I couldn’t resist having it a second time.  We’re not talking about leftovers either, people…a total remake…with the addition of chia seeds.

I made it to the gym today to continue my pledge.  I did a quick 2 miles on the treadmill followed by weights.  I focused on arms today because my legs are so sore from yesterday!  Then I finished up with another 1 mile on the treadmill.  It was a pretty energizing workout, and I felt really focused.  Yea!

Hey hey everyone!

I am loving the weather right now!  It’s that perfect temperature where there is a slight breeze, but the sun is warm enough that you can ditch the jacket and cruise with the windows down.  Ahhh.

I started off this morning with this beauty

Cheers!  These were my drinks for the morning.  I always take this water bottle (BPA free!) with me to work and fill it up throughout the day.  I’ve actually been slacking a bit on my water consumption, and I think it may be to blame for the headaches I’ve been getting.  Gotta hydrate!

Lunch was nice and simple – 2 brown rice cakes with 1.5 tbsp almond butter.  I also had an unpictured 1/2 banana on the side.

By 4 hours later I was famished!  I couldn’t tear into my yogurt with almonds and cranberries fast enough! I definitely let myself get too hungry.  Do you ever get to the point where you are shaky from being hungry?  Not a good place to be…take my word for it.  My snack was just enough to fuel me for a good weight training workout.  I did 6 different leg machines today plus some planks.  I love planks – they are seriously addicting.  I can just feel my core getting tighter and stronger.

After hanging with Jon for a little bit, I started not one, but two dinners; he was craving Mexican casserole, which might as well be called ground turkey casserole because that’s the main ingredient.  This is a meal my mom has made for years and it’s a favorite of our family.  I haven’t had it since before I became a vegetarian almost a year and a half ago.  Crazy!

I have to be honest and say that I really don’t enjoy cooking meat.  In fact, the other night in the grocery store, I found myself avoiding the meat department and sending Jon off on his own to get his goods.  I’ll do anything for my husband, so I always gracefully “handle” his meat, touching it as litle as possible of course.  I’m not trying to be dramatic…it’s just the longer I go without eating it, the less appealing it is.  Make sense?

Veggies!!  asparagus, squash, carrots, bell pepper, and the star of the show: mushrooms.  I also added some chick peas for protein and some garlic powder, ground red pepper and bragg’s for flavor and spice:)

In the end I topped if all off with a bit of nutritional yeast.  Perfect.

A little while later we ran over Jon dragged me to Orange Leaf to get some yogurt.  Excuse the poor quality photo – I’m still learning how to use my DSLR.

Dairy free pinapple yogurt, cocoa covered almonds, a few choco chips, kiwi and strawberries!

Heather is encouraging everyone to take part in GE’s campaign “Pledge for Better Health.”  If you haven’t stopped by there to pledge, you should!  I think it’s a great idea.  I pledged to increase my workouts to 6 times a week – not just to look better, but primarily for better health.  Too often I get so focused on outward appearance in relation to working out, and while there is nothing wrong with that, I want to get my focus back to health!  I’m going to be posting more of my workouts on the little bloggie to help keep myself accountable.

What is your primary motivation to workout?  Or is it a combination of things?  Do you find yourself more focused on how your body will look or how it will feel?

exciting news

Jon and I are going shopping for a new camera next week!!  I am so stoked.  I have been taking all my blog pics with my iPhone, and it’s become so uninspiring.  I’m sure you feel the same way;)  We have wanted a new one for awhile, and since Jon’s side business has really taken off we’ve finally come to a point where we can get one.  Now the problem is just deciding which one to get.  Neither of us knows much about them, so we’re going to have to learn a lot…not only to buy it but to figure out how to use it!

Does anybody have an recommendations?  I’ve heard a lot of good things about the Canon Rebel, but aside from that I don’t have much to go on.  I’d love any suggestions you guys might have!

These past few days have been CRAZY.  On Saturday, my mom, step dad and sister came up to visit for the afternoon/evening.  I love hanging out with family.  My mom and I cooked dinner together while my stepdad and Jon went to Lowe’s to get a deadbolt for our front door.  Awhile later my sister got here, and we spent the rest of the night eating and just hanging out.  It is not often that my mom, sister and I all get to spend time together, and it was definitely the highlight of my week.  I wish we could do it more often.

Sunday also involved family, but was not nearly as pleasant.  My grandma recently found out she has pancreatic cancer, and her health is declining quite rapidly.  She doesn’t have much longer, so we drove to my hometown on Sunday, picked up my sister and went to visit her.  While I’m so glad we went, it was really hard to see her in the state that she’s in.  Needless to say these last couple of days have been a bit dismal feeling.

I do have some random pics of some eats from the last couple of days.  I promise that once we get our new camera (and figure out how to use it;) food pics will be much more exciting.  I can’t wait!

Regardless…

One of my favorites as of recent – stir fried carrots, zucchini, spinahc and brussels with soba noodles, doused in nutritional yeast obvs.

This is the kombucha that I brought home from Whole Foods when we went there on Valentine’s Day.  I saved it ever since then and finally broke it out after our 5 miler on Saturday.  It was totally worth the wait!!  Now I just need to figure out how to get another one…

This has become my current favorite way to eat oats – cooked in water and topped with soy yogurt on one side and almond butter on the other.  Sprinkled with a bit of Bob’s Red Mill cinnamon apple granola.  This is addicting.  I am so addicted to the combination of yogurt and granola.  I may have to add that to my challenge list.  haha! yeah right.

And last but not least, dinner tonight.  I kept it simple because Jon wasn’t home to eat with me, and I just didn’t feel like spending much time on dinner.

Avocado and hummus sandwiched between ezekiel bread.  Exactly what I was craving.  It totally hit the spot.  I love simple meals like this.  Obvs. this meal was lacking a bit in the veggie department, but I’m never low on veggies so I didn’t worry about it too much!

I hope everyone is having a great start to the week.  Only four more days and I’ll be on Spring Break when I get to spend every waking moment with the Mr.  It seems like a dream right now.

weekend highlights…

…minus Valentine’s Day.  I’m saving it for the next post.  I think it deserves it’s very own:)

Saturday Jon and I got up and got to work cleaning the house.  It always takes forever to deep clean the entire house, but it’s so worth it because we both feel so great when it’s done!!  After that I packed up all of my school stuff, and we went up to his office to work.  Jon is in his busiest season at work, and my job in general is busy season because I’m a 1st year teacher.  So, we knew we wouldn’t be able to enjoy the rest of the weekend unless we knocked out some of our work.

Here are some food highlights from the weekend:

Lunch on Friday (because I took off to stay home and work) was a Joseph’s Protein pita filled with avocado, spinach, zucchini, squash, pickles and nutritional yeast.  I had it with a side of hummus for dipping and a sliced pear with sprinkled cinnamon!  So fresh and so delicious, yet so simple!

Friday afternoon I headed to the coffee shop to have a change of scenery while I graded.  I took along an AB banana roll up – a Joseph’s pita (should there be a limit on these things?) smeared with almond butter and sliced banana, all rolled up!  Transportable and tasty!

This was today’s snack on the way home from work.  It was the most beautiful apple I’ve ever eaten.  I picked this baby up from a certain store that Jon took me to on Valentine’s Day.  That’s just a little teaser for tomorrow’s V-day post.  I also had a certain kind of nut butter smeared on it that I’ve been wanting to try for ages.  It may also have come from this certain store.

Apologies for the picture quality…this bowl was so much better than it looks.  I often borrow a camera that takes beautiful pictures from Jon’s work, but lately I haven’t had it so the iPhone has had to suffice.  boo.

And finally, tonight’s dinner.  I was having a serious craving for a giant bowl of veggies, and that’s exactly what I got.  A little too big perhaps:)  I tossed together cauliflower, broccoli, zucchini, squash, onions, carrots, mushrooms and spinach.  I sprayed it a few times with Braggs, and dumped in a small handful of raw cashews.  I also added a few pieces of Tempeh that I picked up the other day as well (more to come on that).  This was the second time I’ve ever had Tempeh, and the first time I made it I did not care for it at all!  I’m so glad I gave it a second chance, though.  It was really good in this stir fry with just a bit of Braggs sprayed on.  I’ll definitely be highlighting it again in the future once I decide on another way to cook it.

Well, that’s it for the highlights.  Unfortunately, I have got to go do some serious grading.  Blah.  I’ll be back tomorrow, though, with a fun post on what we did and where we went for Valentine’s Day!  Hope everyone is having a great President’s Day!

short and sweet

This post is going to be short and sweet.  My students turned in their research papers today (blah), so I’ve got a pile of grading a mile high that I’ve been attempting to sort through.  Plus, tonight has just gone by really fast, and this girl has got to hit the sack!

If there is one thing besides clean eating and exercise that I find imperative it’s sleep.  Getting up at 5am every morning, it’s nearly impossible to get 8 hours, which would be my dream (no pun intended:).  I do strive to get at least 7, though, and it’s going to be pushing it at this point.

I made a fun little run to the health food store after work today.  Most people would think I am crazy considering how excited I get at the health food store, but I just love browsing and seeing all the different foods, and of course picking up a couple of special treats while I’m at it.  And of course you of all people probably can identify.  Here is a picture of my loot.

I’m not going to go into detail about it all tonight, but definitely expect some reviews coming soon because several of these items are new to my repetoire, and so far they have totally blown me away.  And with that I present to you dinner:

a little less than an ounce of soba noodles
brussels
broccoli
cauliflower
onion
garlic
turnip greens
mushrooms

First, I sauteed the onions and garlic in a little bit of evoo for a few minutes.  Then I tossed in all the other vegetables besides the mushrooms and turnip greens.  As I sauteed them, I sprayed Braggs on intermittently.  As soon as those veggies were done, I added the mushrooms and turnip greens just for about a minute.  Once they were done I mixed them in a bowl with the cooked soba noodles, and then sprinkled nutritional yeast all over it (my favorite part!).

Wow.  That’s all I have to say.  The veggies played the starring role in this meal, and the nutritional yeast was like the icing on the cake.  The soba noodles have probably become my favorite noodle (haha), but I like to say I had some soba noodles on my vegetables rather than the other way around.  This was just such a great combo that I could probably have every night.  I promise I won’t bore you, though. Definitely expect the nutritional yeast to make a second appearance tomorrow, though!
