a success

I can’t believe it’s already Thursday. This week has flown by!  I’ve been spending the last couple of days eating and breathing yoga as I’ve prepared to teach my first class.  I’m happy to say it went really well!  There are of course a lot of things I want to improve upon as I continue teaching, but for my first class I was pleased.

My eats have been kind of boring because I’ve been so preoccupied…just the closest, healthiest (and sometimes not so much) thing and call it good has been my motto!  Sometimes life is just like that you know?  However, last night when I walked in the door from yoga at about 6:45, the husband was hard at work in the kitchen, cooking up a fantastic recipe from, you guessed it, Eat, Drink and Be Vegan!

Gimme Chimis

Ingredients

  • 1/2 – 1 tbsp olive oil
  • 1/2 cup onion, diced
  • 2 large garlic cloves, minced
  • 1 tbsp chili powder
  • 2 tsp dried oregano
  • 1-1.5 tsp Chipotle Hot Sauce
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/2 tsp sea salt
  • 1.5 cups zucchini, julienned
  • 1/2-3/4 cup tomatoes, chopped
  • 1 can pinto beans, drained and rinsed
  • 1/2 cup tempeh, chopped (or extra firm tofu or additional 1/2 cup beans of any variety)
  • 1.5 tbsp balsamic vinegar
  • 4 whole wheat tortillas
  • 2 tbsp olive oil (for frying)
  • fresh lime wedges, for garnish
  • fresh cilantro leaves, chopped for garnish

Directions

  • In a frying pan on medium heat, add oil, onion, garlic, chili powder, oregano, chipotle sauce, cumin, cinnamon, cloves and salt and saute for 2-3 minutes, stirring occasionally
  • Add zucchini and tomatoes, and saute for another 5 minutes until veggies soften.
  • Add beans and tempeh (or substitute), stir to combine, and saute for another 3-5 minutes.

  • Stir in vinegar and transfer mixture to a bowl (scraping out all filling and reserving pan for later).
  • Preheat oven to 425 degrees.  Line baking sheet with parchment paper or spray with cooking spray.
  • On a flat surface, spoon 1/4 of filling down center of each tortilla, leaving 1-2 inches space on top and bottom.  Fold bottom edge over filling and roll up, tucking in sides as you go.
  • In the same frying pan on medium-high, heat oil for 30 seconds, then place burritos seam-side down on pan
  • Cook for 2-3 minutes on each side to lightly brown, then transfer to lined baking sheet )or if frying pan is oven-proof, then simply place it in oven) and bake for 12-15 minutes.
  • Remove and serve with lime wedges and a sprinkling of cilantro


This recipe was awesome.  I have to say that before I became more conscious of my health, chimmichangas were one of my favorite meals to order at mexican restaurants.  I especially loved the fried crispy shell.  This healthified  recipe was very reminiscent of the old chimi days…and the part that was most similar was the tortilla.  It was flaky and crispy, yet soft in just the right areas.  Score!

Well, I hate to cut this short, but I gotta run.  Tomorrow is the day I leave to go get my yoga certification, and I still have to read up on the manual and pack.  Oh, and run through my PiYo class again because I’m teaching in the morning!  I am loving all the yoga in my life right now, but I’ll also feel a bit relieved when the new stage has worn off and I can spend a little less time and energy preparing.  Soon enough, soon enough.

I can’t believe the weekend is already over!  Summer is flying by.

Yesterday, Jon and I spent most of the day cleaning.  Thankfully Jon offered to tag team it with me…and it still took us over 3 hours!  We did the hard core, twice a year kind of clean.  The whole time I just kept envisioning how great it was going to feel once it was done. And it was so worth it.  I love waking up to a clean house!  The only downside = it can only go down from here:(

Dear beloved green beans,  you may now have a new green rival.

We got up and went to early service and Sunday school this morning.  I took a green monster to-go (running late of course:) and drank it during the service.

For lunch, we were both craving pancakes for some crazy reason – here’s what I came up with!

I used Hodgson Mill Buckwheat pancake mix, which includes 1 egg (organic free range of course) and 1 tbsp of oil

2 cakes layered with plain Whole Soy yogurt + fresh blackberries

makes my heart go pitter patter.

I need not explain how delicious they were.

The rest of my eats today were very random.  They included things like bran flakes and soy milk, tons of watermelon and more leftover green beans. hehe.

That’s all for today friends.  I’ve gotta be up and at ’em early because I have a 9:30 am orthodontist appt. on the other side of creation (ie my hometown).  Hoping to get in a run first!

Last year while I was teaching and commuting, Jon took care of almost all the housework (swoon).  But now that I’ve got more time, I have taken back over a lot of it.  While I don’t love the actual act of cleaning…I do love keeping my house and making my husband HAPPY:) Plus, I LOVE the feeling of a spic and span house.

Hellllooooo!

You guys had some fun comments on this morning’s post about kickboxing and yoga classes.  It seems that most of you have tried kickboxing at some point or another and LOVED it.  So exciting to hear the changes you’ve seen through kickboxing!

I was a busy busy bee today.  I keep wondering…how did I ever work a full-time job?  Haha.  only kidding.  I guess I just never met up with friends over lunch, worked out 3x over the course of one day or talked to my sis-in-law on the phone for an hour and a half. doh.

I met my friend, Grace, at Chipotle for lunch today; we had so much to catch up on!  And we caught up over some dang good food, I tell ya.  Chipotle is where’s it’s at!

Chipotle is one of my favorite restaurants because I feel good about eating their food.  The following is a quote from their website regarding what “food with integrity” means to them:

It means serving the very best sustainably raised food possible with an eye to great taste, great nutrition and great value.
It means that we support and sustain family farmers who respect the land and the animals in their care.
It means that whenever possible we use meat from animals raised without the use of antibiotics or added hormones.
And it means that we source organic and local produce when practical.
And that we use dairy from cows raised without the use of synthetic hormones.

I love that:)  It makes me really think about what “food with integrity” means to me.  Honestly, I feel like I’m still working toward my own definition of the phrase. I’ve been a vegetarian for over a year and a half now and mostly vegan for about 6 months; one huge reason why I eat the way I do is because I can’t feel good about eating food that has been produced by unethical means.  Food Inc. is one movie that set me on this path, and I’m in the middle of a couple of books that are continuing to help shape my ideas and beliefs about having integrity with my daily diet.

The more I learn and discover, the more passionate I feel about making a difference.  Even if it means that I give up one new food item each month, to me that is an accomplishment that I can feel proud of.  Many people often say to me “I can’t be a vegetarian/vegan because I can’t give up X” or “it’s just too hard, I’m afraid I would fail” or “I can’t buy organic because I can’t afford it.”

I want people to understand that it’s not about being perfect. It’s not about never having ice cream again or never eating real cheese again…or even never eating steak again (if that’s what floats your boat:).  It is about doing even one small thing to make a difference.  Such as eating vegetarian one day each week.  Buying organic, free range chicken fifty percent of the time.  Or eating one vegan meal each day.  Or just giving up red meat except on weekends.  Those are just some ideas.

My husband has said before that he can’t be vegetarian because he can’t give up Chick-fil-a sandwiches.  Eat that Chick-fil-a sandwich if it’s what is holding you back!  In no other area of our life do we say “if I can’t be perfect then I’m not even going to try.” Why would we say that about our diet?

I will be honest…I have eaten real ice cream in the past few weeks.  I’ve had real cheese in the past month.  But those have become the exceptions in my life.  I feel good about that, and I don’t beat myself up for the imperfections. Perfection is boring anyway;)

Let’s take steps together to throw out labels and do the best we can each day to improve our health and make our world a better place for our children and our children’s children. That’s what it’s all about!

This afternoon was by far the busiest part of my day!  I met Mohammad for a tutoring session before rushing off to power yoga.  Yoga made up my 3rd, yes 3rd trip, to the gym today.  I think it put me over the edge a bit.  My arms were still feeling weak from my class this morning, and I just didn’t have much left in me.  I pushed through, though, and by the end was super glad I went.  Always am with yoga:)

For dinner I decided to whip up a quick spaghetti dish

with tempeh, my love:)

green beans – straight from my mom and step-dad’s garden.  Sauteed in olive oil with chopped onions, garlic powder, sea salt and black pepper.  To die for.  I’m not even kidding.  Thank you mom and Clark:)

I just kept picking at these green beans all night, finally resorting to moving them to the fridge so I’ll have some left for later!  I might dream about green beans tonight.  I need help.

it's the little things

Wow, today was a hot one!  I about passed out on my run this morning…literally!  All’s well that ends well, though, and I pulled through.  It didn’t help that I waited until about 9 am to get out there.  Tomorrow’s goal: get my bootay outta bed early!

Here’s the stats:

distance – 3 miles
time – 29:54 yay!
fastest pace – 7 minute mile – I sprinted it in, hoping to finish in under 30 minutes
average pace – 9:58

Guys, I seriously wanted to quit on this run at about 2.4 miles.  My legs were so tired, and I’m fairly certain I was dehydrated (it was blazing hot and so humid).  I just kept thinking “pain is temporary, pride is forever.”  As silly as that sounds considering this was just a random 3 mile run, it’s the little things you do that add up to big things.  Next time three miles won’t be quite as daunting!

By the time I recovered from the run, I had about 20 minutes ’till I had to be at my hair appointment eek!  I scurried around, guzzling my green monster on my way out the door and made it there about 7 minutes late.  Check out the new ‘do

Riiiight.  So, you’re thinking it looks the exact same.  It’s shorter…you’ll just have to take my word for it;)

After chatting with my mom for a bit, it was time for lunch!

It’s tempeh time!

I heated slices of tempeh in a skillet for just a couple of minutes, toasting a slice of ezekiel bread and whipping up a quick batch of guacamole in the meantime.  I laid a thick layer of guac on my toast, topped by a layer of spinach leaves, with tempeh to finish it all off! Simple!

If you’ve never tried tempeh, you should really give it a go. It’s a great protein source for all of my fellow non-meat eaters.  It’s made out of soybeans and often has seasonings and grains, such as barley added to it.  Even though it’s made from soy as well, tempeh tastes almost nothing like tofu.  And unlike tofu, it has a very textured consistency and nutty flavor.  You can add it to stir fries, soups, sauces or eat it on a sandwich or wrap.  There really are a plethora of possibilites!  It can be found in the refrigerated section of most health food stores and maybe even your local grocery store.

These cherries were on their last leg, unfortunately.  I even had a to pick through them and end up throwing away several:(  The one thing I hate more than throwing away precious cherries is eating soft ones!  The good ones were still tasty though.

I spent the afternoon working on these mysterious projects I keep referring to (I promise I’ll be spilling the beans soon)!  I’ve been thinking through a lot of things about my life lately.  I’m currently reading a book about how we should focus on our strenghts in everything we do.

What makes you strong?

Try to think of a strength as different than what you’re used to.  Instead of being something that you’re good at, a strength is something that makes you feel strong when you do it.  What makes you feel alive?  Those are your strengths.

Have you ever felt like somebody wanted you to do something because they thought you were good at it, but it wasn’t something you enjoyed?  It was something that made you feel weak or drained afterwards?  That is not a strength because it doesn’t make you feel stronger.

We should all play to and focus on our strengths as much as possible.  Life is too short to focus on the things that make us feel weak.  Of course we have certain responsibilities that are non-negotiables.  I don’t think anyone would say that cleaning the toilet makes them feel strong and alive.  I’d love to hear about it if that’s you:)

But in every situation possible, we should do everything we can to incorporate those things that make us feel strong.

this girl knows what she wants

So, I’m not the only one who knows exactly what I want in my food.

For awhile now we’ve been having trouble with Olive not being able to um….let’s just say “hold down her food.”  It finally dawned on us yesterday that she might just be trying to tell us something.  Maybe losing your lunch at least once a week for no apparent reason isn’t totally normal.

After a short visit to the vet, we decided to change her food.  You can’t just change it overnight, though.  You see, if we switch her cold turkey lamb, we’ll risk having problems at the other end.  The trick is to sift in the new food just a little at a time and after about a weeks time be completely done with the old food.  Well, that only works if the ahem person involved agrees to continue eating the old food.  As opposed to only picking out the new food kernels of course.

Exhibit A.  This is what we found after having incorporated the new food in with the old.  If you look closely you can see that there are bits of food under her bowls.  She also had trailed it all across the kitchen floor.  So, we decided to do a little test to make sure it wasn’t a fluke.

Exhibit B.  Olive is given an Olive sized bowl each of California Natural (the old food) and Prairie (the new food).

Exhibit C.  When given the go-ahead, Olive immediately goes for Prairie.

Exhibit D (not pictured).  Trickster Dad stops Olive mid-gulp and quickly switches up the bowls to see if she chooses the same one again.  Of course she does.

Lastly, dad gives Olive the California Natural bowl and scowls as she turns her nose up at it.  He then proceeds to give her the Prairie bowl, which she immediately devours.

Folks, we have a verdict.  Now we’re left scratching our heads and wondering “has she been throwing up as an act of rebellion because she doesn’t like her food? or is she allergic?”  We may never know.

Onward and upward.  Today Jon and I proudly made it out of bed in time to get in a workout.  We had planned to break our sweat at the gym because it is so dang hot outside, but we were pleasantly surprised when we stepped outside and it felt only like a cool 80 degrees.  Without hesitation we abandoned our gym passes and headed to the street.  After putting in a quick 20 minute run, we came back to get O for a walk.

Shortly after our run, I was reunited with this guy

2 big handfuls spinach
1 cup soy milk
1 tbsp chia seeds
1 scoop Amazing Grass
1 tbsp almond butter
ice

Because of vacation and a lack of groceries since, I have not had a green monster in a couple of weeks!  It was a grand reunion.  Tomorrow I shall be reunited with overnight oats methinks.

I spent most of the morning at the coffee shop working on some stuff and sipping on a nice iced soy latte.

Now I know how this looks.  Let me explain.  When Jon and I decided to commit to our “no eating out for a week and that includes coffee” challenge, we agreed that we could still get coffee drinks from The Daily Grind.  Jon worked there for five years during college and we’re still good friends with the owner, so we have a prepaid card and we are only charged a dollar per drink.  I know, I know.  It still seems like we’re cheating, but technically no money changed hands, so I vote that we’re in the clear.

On a more honest and admirable note, I did pack my lunch so I wouldn’t be tempted to grab something.

Thank you Mister whole wheat tortilla broccoli slaw sprouts hummus and tempeh wrap.  You saved me from making a decision I would later regret.  Just a warning for tomorrow, though.  A good friend whom I haven’t seen in some time asked me to meet for lunch tomorrow, and I agreed.  Hey, life happens.  And the point of the challenge is still being driven home.

And dinner…

Carrots, onions, bell pepper, squash and zucchini sauteed in Evoo and doused with Bragg’s Liquid Aminos and Nutritional Yeast.  Served over a bed of Soba noodles.  A go-to favorite.

Followed by banana soft serve with a bit of Maranatha Chocolate Almond Butter mixed in.

The rest of the day consisted of a long overdue phone chat with my college roommate, starting to clean out our office and chilling with my sweet husband.

cruisin' in style

I’m bloggin’ from the road today as Jon and I head to my hometown to spend some time with my mom.  We slept in this morning, and I woke up with a smile on my face!  I love love love waking up to sunlight coming in through the window, and it happens far too seldom.

Our Mini Cooper is getting serviced right now, and it just so happens that the dealership was fresh out of “service car” minis, so…..they gave us a BMW for the weekend.  We don’t mind a bit.  I could get used to this;)

As soon as we got up and got around we headed to the lake to get in a quick three miles.  It was super windy, but the temperature was perfect!  We followed it up with the first two circuits of Jillian’s level two shred workout.  We totally stuck with our two workouts every day this week – Jillian in the morning and 3 miles in the evening.  We did take a rest day on Friday.

Before our run I ate half an Ezekiel English muffin with a bit of almond butter.  Considering our entire workout didn’t end until almost noon, it was not enough fuel!  By the end of Jillian, I was famished!

I quickly threw some tempeh in a pan with a couple squirts of Bragg’s.  After heating it through, I added it to a whole wheat pita along with some Sabra pine nut hummus, spinach, onions and pickles.  Also, some grapes on the side.

After lunch we spent some time cleaning up the house and then I settled in to do some blog surfing grading.  Unfortunately, I didn’t get near as much done as I needed to before we had to get packed up and head out!

Oh, I also snacked on some soy yogurt with frozen cherries, sliced almonds and granola…and we grabbed a soy latte on our way out of town.

I just want to say thanks for all the sweet comments and encouragement from you guys regarding my personal trainer certification.  It made me feel so affirmed about my decision.  You all are the best!  I can’t wait to share with you as I go through the process.  It’s so exciting to me to master something new.  I’m also realizing that I am a much better student now that I’ve been a teacher.  Totally didn’t’ expect that, but I feel like I just understand the learning process better now.  Good thing ‘cause I’ll need all the help I can get!

weekend highlights…

…minus Valentine’s Day.  I’m saving it for the next post.  I think it deserves it’s very own:)

Saturday Jon and I got up and got to work cleaning the house.  It always takes forever to deep clean the entire house, but it’s so worth it because we both feel so great when it’s done!!  After that I packed up all of my school stuff, and we went up to his office to work.  Jon is in his busiest season at work, and my job in general is busy season because I’m a 1st year teacher.  So, we knew we wouldn’t be able to enjoy the rest of the weekend unless we knocked out some of our work.

Here are some food highlights from the weekend:

Lunch on Friday (because I took off to stay home and work) was a Joseph’s Protein pita filled with avocado, spinach, zucchini, squash, pickles and nutritional yeast.  I had it with a side of hummus for dipping and a sliced pear with sprinkled cinnamon!  So fresh and so delicious, yet so simple!

Friday afternoon I headed to the coffee shop to have a change of scenery while I graded.  I took along an AB banana roll up – a Joseph’s pita (should there be a limit on these things?) smeared with almond butter and sliced banana, all rolled up!  Transportable and tasty!

This was today’s snack on the way home from work.  It was the most beautiful apple I’ve ever eaten.  I picked this baby up from a certain store that Jon took me to on Valentine’s Day.  That’s just a little teaser for tomorrow’s V-day post.  I also had a certain kind of nut butter smeared on it that I’ve been wanting to try for ages.  It may also have come from this certain store.

Apologies for the picture quality…this bowl was so much better than it looks.  I often borrow a camera that takes beautiful pictures from Jon’s work, but lately I haven’t had it so the iPhone has had to suffice.  boo.

And finally, tonight’s dinner.  I was having a serious craving for a giant bowl of veggies, and that’s exactly what I got.  A little too big perhaps:)  I tossed together cauliflower, broccoli, zucchini, squash, onions, carrots, mushrooms and spinach.  I sprayed it a few times with Braggs, and dumped in a small handful of raw cashews.  I also added a few pieces of Tempeh that I picked up the other day as well (more to come on that).  This was the second time I’ve ever had Tempeh, and the first time I made it I did not care for it at all!  I’m so glad I gave it a second chance, though.  It was really good in this stir fry with just a bit of Braggs sprayed on.  I’ll definitely be highlighting it again in the future once I decide on another way to cook it.

Well, that’s it for the highlights.  Unfortunately, I have got to go do some serious grading.  Blah.  I’ll be back tomorrow, though, with a fun post on what we did and where we went for Valentine’s Day!  Hope everyone is having a great President’s Day!
